Vacuum Cold Soup of Asparagus recipe by TESCOM

 

Ingredients (for a couple of servings, 500ml)

1- 200ml milk
2- 160g green asparagus
3- 185g onion,
4- 10g butter
A) 1- 200ml water
  2- 1/2 teaspoon consommé

 

Method

Step1:
Pare off the hard skin of the root of asparagus, and cut the vegetable into 3cm in length.
Slice onion thinly.


Step2:
Melt butter in a frying pan, and stir fry [Step 1] until the onion gets translucent.
Add A) and heat it for 7-8 minutes.


Step3:
Let [Step2] cool down.
Put milk, then [Step 2] into the blender container, set the timer to 60 minutes, and push the VACUUM FRESH button.


Step4:
Serve [Step3] on a plate, season it with salt and pepper.
Top it off with fresh cream and the tip of asparagus.
